Chocolate Courgette Cake

I thought I should really kick this blog off with something chocolatey as you cannot go wrong with chocolate, well at least in my eyes you can’t πŸ™‚

First time I baked this cake was last September when children were going back to school and to commiserate the end of summer. Well what can I say, it definitely softened the blow, everybody loved it…

I like using vegetables in my bakes as not only do they make me feel less guilty about indulging but also there is less of a chance for the cake to be dry πŸ™‚

It all started with some lovely courgettes I managed to pick up from the market plus all the usual culprits and lots and lots of chocolate πŸ™‚

Chocolate Courgette Cake


  • 115 g unsalted butter
  • 250g caster sugar
  • 125 ml sunflower oil
  • 1 tsp vanilla extract
  • pinch of salt
  • 2 large eggs
  • 125 ml sour cream or plain full fat yoghurt
  • 300g plain flour
  • 1 tsp baking soda
  • half a tsp baking powder
  • 60 g cocoa powder
  • grated courgette (approx 340g) – don’t peel it before grating, if using overgrown courgettes you might want to discard the seeds (no need to do this when using young, small ones)
  • 60g dark chocolate chips
  • Ganache:
  • 100g dark chocolate
  • 40g unsalted butter


  1. All the ingredients should be at room temp. Sieve flour, salt, cocoa powder, baking powder and baking soda and put aside.
  2. Mix together butter and sugar until light and fluffy. Add eggs one at a time and continue mixing. Gradually add oil and vanilla.
  3. Add sieved dry ingredients in three parts alternating with cream/youghurt. Mix only until all the ingredients are incorporated, do not over mix. Add courgette and chocolate chips and mix gently.
  4. Put the mixture in 25cm springform baking tin or equivalent lined with baking paper and bad for approx 35-45 at 160C until the toothpick comes out clean. Take the cake out of the oven and let it cool before spreading chocolate ganache.
  5. For ganache put butter and chopped chocolate in a pan on a low heat and mix until melted and combined. Spread onto your cake and enjoy πŸ™‚
