Baking Crumbs – May 2018 Round Up


Welcome to #BakingCrumbs May 2018 round up full of fabulous recipes linked up during the month of May!  On top of that, I will also reveal which recipe I decided to recreate in my kitchen!

It’s been great fun to visit every single one of your lovely bakes and also get to know some lovely new bloggers! It is such a friendly linky but then if you like cake you’ve got to be friendly right? 🙂

  • This lovely and light Party Angel Food Cake was baked by Jhuls to celebrate 5th anniversary of her blog. It is also accompanied by her first video so go check it out and give her thumbs up!
  • Amanda’s Giant Custard Cream Cake is yet another revelation of a cake from this talented lady! With her easy to follow instruction you can soon be making one too!
  • This month Jacqui from Recipes Made Easy revealed her beautiful Semi-Naked Wedding Cake. With three delicious tiers – vanilla, pistachio & lime and raspberry & coconut and gorgeous sugar works it is a stunner of a cake. Make sure you read Jacqui’s hints and tips too and the prospect of making a wedding cake will no longer be so daunting.

  • Debbie from Proper Foodie wowed us with her Salted Caramel Popcorn Cake – sticky toffee pudding sponge cake layered with whipped cream, popcorn & salted caramel…I shall start my diet tomorrow if that’s ok. 🙂
  • Choclette’s Double Delight Bundt Cake is offering us two delightful flavours swirled together – Chocolate Rum & Raisin and Coconut & Lime. Why settle for just one when you can have two delicious cakes in one!
  • If you are looking for a celebration cake which is delicious, stunning and not overly complicated this Raspberry Mascarpone Layer Cake by Cat from Curly’s Cooking should be the one! Just look at it!
  • Who doesn’t love banana bread? Classic but full of surprises this Blueberry & Coconut Banana Bread by Jenny from Mummy Mishaps is bursting full of juicy blueberries and there is coconut twist too!

  • Somebody said donuts? 🍩 Oh yes and not just any donuts but Chocolate Orange Baked Donuts by Kat from Baking Explorer. Don’t they simply look the part and that flavour combination… one of the best ever!

  • This rich & creamy Rhubarb Cheesecake by Jacqui from Recipes Made Easy is a dream come true for all rhubarb & cheesecake fans! It doesn’t get much better than proper, rustic cheesecake and tangy, seasonal rhubarb to cut through it! I will be trying this one very soon!
  • Who wouldn’t fancy this Rhubarb and Custard Layer Cake with Pistachio Sponge by Kate from Gluten Free Alchemist. Delicious, retro flavour combination and gluten free too!
  • My Easy Rhubarb Cake  is slightly tangy, not overly sweet, perfect with lovely cuppa, great for picnics, garden parties… It’s really quick to put together too so there is really no excuse. 🙂

  • These Jammie Dodger Blondies by Nickki from Something Sweet Something Savoury are something else! Soft & squidgy blondie perfection topped with swirl of jam & delicious biccies!
  • White chocolate and raspberries go so well together and these deliciously looking Raspberry Blondies by Helen from Cooking with My Kids prove this. One to try with your kiddywinks!

  • Doesn’t this Chocolate Chilli Pavlova by Jess from Jess Eats & Travels look amazing? Crispy on the outside and chewy on the inside with hint of chilli, perfectly whipped cream and fresh raspberries. Simple & Delicious!
  • Helen from Cooking with My kids based her recipe for Summer Berry Pavlova on that by Mary Berry and as you can imagine perfect mixture of soft gooey marshmallow on the inside with a delicious crunch on the outside has been achieved here as well. Add whipped cream and berries and perfect Summery dessert is at the ready!

  • Nickki’s description of her lush White Chocolate and Strawberry Cupcakes says it all – “Tender, soft vanilla cupcakes filled with white chocolate chips and topped with an indulgent white chocolate buttercream frosting, white chocolate shards and a fresh strawberry!” 🙂
  • Angela’s Lemon & Elderflower Cupcakes are perfect homage to Royal Wedding celebrations we all enjoyed last month! Elderflower flavoured sponge with lemon curd filling and topped with lemony buttercream – how delicious! And they look so delicate and pretty too!

  • Jess’ Walnut and Cardamon Biscuits / Mutaki take us to Azerbaijan. Gently spiced, nutty paste encased in lovely pastry, these lovely biccies would be perfect accompaniment to your cup of coffee.
  • This time Amanda from Icing Insight presented us with fantastic Summer Styles Painted Cookie Tutorial which explains everything in such detail you’ll be making your own before you know it! Including your own diy cutters!
  • These jammy sandwiches look so unbelievably delicious! Debbie’s Shortbread and Blackcurrant Biscuits combine slightly tangy blackcurrant jam with sweet and buttery shortbread biscuits…Yum!
  • Another lovely shortbread biccie is by Cori from Coriander Cooks blog and it is Chocolate, Hazelnut & Coriander Shortbread. Melt in the mouth morsels of deliciousness with so much going on including Cori’s trademark ingredient coriander 😉

  • This deliciously zesty Lemon and Buttermilk Traybake came about from using up some buttermilk and another one for some lemon cake. 🙂 Jenny has already had to bake couple more as it proved so popular. Quick & easy bake if you need something delicious and you need it NOW!
  • I will never say no to brownies and these Triple Chocolate Almond Brownies by Choclette from Tin and Thyme are no exception! Naturally gluten free, fudgy & rich, what else would you need?
  • Crumbly almond shortbread with lovely & soft apricot jam layer & crunchy topping of amaretti biscuits and flaked almonds! Angela’s Apricot & Almond Shortbread Slices look & sound irresistible!
  • This Sloth Slice – Easy Chocolate Chip Slice by Johanna of Green Gourmet Giraffe food blog is a perfectly moreish mixture of coconut & chocolate.  Perfect little indulgence!
  • Classic treats at their best! These Best Flapjacks Every by Jenny from Apply to Face blog definitely live up to their name! Soft and chewy on the inside, crunchy on the outside, simple flapjack perfection!

  • Kate’s Original Savoury Summer Upside Down Cake  is gluten free and full of veggie goodness! A must for Summery al fresco dining if you ask me.
  • These quick & easy Mini Pizzas by Anca from Cook Style would make fantastic canapés or brilliant snack. Don’t mind if I do.
  • There is no better accompaniment to curry than naan bread especially when it’s Easy Homemade Naan Bread by Eb from Easy Peasy Foodie. Oven baked and using only handful of ingredients, you will be wondering why you haven’t made one before!

  • If you are looking for healthier alternative to carb heavy pizza, why not try Angela’s Cauliflower Crust Pizza for a different take on a favourite? I know I will!
  • Quick, easy and oh so moreish Cat’s Chorizo & Cheese Pinwheels  are a perfect snack if you ask me. Super portable and picnic friendly, they will be a favourite during your next lunch on the green!
  • These dainty, Puff Pastry Party Bites from Kate at Gluten Free Alchemist use gluten free puff pastry making them perfect gluten free canapés for any gathering. Wonderful filling ideas for these delicious bites too!

  • What would you say about having couple of scoops of Helen’s homemade Berry Ice Cream ? Creamy and “berry” refreshing, it’s a perfect treat on a hot day! And kids can help you make it too!
  • Last but definitely not least is dreamy Roasted Banana Gelato by Jess from Jess Eats & Travels. Imagine the intensity of flavour from roasted bananas, their sweetness… Gelato perfection!


What I recreated in my kitchen from May’s linky…

As you can imagine, choosing only one bake out of 35 linked up in May wasn’t easy. The bake that won in the end was quick and easy to make in the morning of a planned outing plus for my two or rather three boys (if you count the big one) it simply doesn’t get better than a simple biccie and shortbread is one of their ultimate faves.

There were few gorgeous shortbreads linked up by with my lot simplicity is the key and I knew I couldn’t go wrong with chocolate and nuts so I went with Cori’s Chocolate, Hazelnut & Coriander Shortbread which turned out to be such a hit and were devoured the same day! These are so super crumbly and I like slightly different texture semolina gives those biccies too. I didn’t have any coriander seeds so decided to add half a teaspoon of ground coriander instead but next time I shall be brave and up it to one whole teaspoon.

Thank you Cori for your lovely recipe and accepting my invite to join the linky, these will now feature permanently on our baking list (my kids will make sure of that)! 🙂

    What an amazing month May has been Jo – 35 bakes!! It’s may be a good job I called on you to take the reins lol – but seriously thankyou so much for guest hosting you’ve done a REALLY FABULOUS job – great hosting and great round up too. And those shortbread cookies with the coriander in there look so good too – I’m not surprised your boys are making sure they permanently feature on your bake list 🙂

    Such a lovely round up Jo! I would like to eat quite a few of these and especially the rhubarb recipes. I’m craving some now having just read this. I also love the sound of those biscuits you made – I’ve never added coriander to biscuits but it’s definitely on my list of things to try now. x

      Thanks Corina! 🙂 It’s such a tasty round up indeed, you would like to eat with your eyes lol. Cori’s biscuits were melt-in-your-mouth delicious and I loved how adding semolina has changed a texture ever so slightly. I’ve used ground coriander instead of toasting and grinding my own seeds like Cori did so flavour was very subtle yet still so delicious especially with lots of hazelnuts and chocolate in them. Highly recommend! 🙂 x
