I simply cannot get enough of asparagus this season and am really embracing it. This Asparagus & Sun-Dried Tomato Risotto is simply too good not to try. It marries two distinct flavours of sun-dried tomatoes and asparagus really well. Initially I thought that sun-dried tomatoes might be a bit overpowering and yes their flavour is definitely quite a dominant one. However, lovely chunks of asparagus thrown in definitely hold their own. Addition of lemon zest as garnish is pretty cleansing and helps to enjoy this dish as a whole.

Goodness, reading back I do sound a bit like some restaurant critic. 🙂 That wasn’t my intention, but I did want to paint you a picture… Hopefully, it will make you want to try it. 🙂

This dish contains fair bit of butter and parmesan (feel free to substitute if you’re after vegan fare). Even though not too good for the waistline, in my opinion they are essential ingredients for making risotto what it should be… Creamy, smooth, loveliness on a plate. It’s better to have little of a good thing…

I have included slices of pan fried chorizo as optional addition/garnish. Feel free to go with it or not, it’s entirely up to you. Men in my house share a love to anything meaty and purely vegetarian dinners do not go down very well. 🙁 To keep my lot happy there was chorizo on offer and yes, they did go for it. I tried…

Asparagus & Sun-Dried Tomato Risotto

Asparagus & Sun-dried Tomato Risotto

Yield: 2 adults and 2 kids (as a main meal), 4 adult lunch servings if served with bread/salad

Ingredients

  • 1 Tbsp sunflower oil or oil from sun-dried tomatoes
  • 25g unsalted butter
  • 280g asparagus
  • 1.2 litre hot veggie stock (cube is fine)
  • 1 onion finely diced
  • 8 sun-dried tomatoes in oil finely sliced
  • 300g risotto rice
  • 85g freshly grated parmesan
  • additional 15g unsalted butter
  • salt and pepper
  • lemon zest to garnish
  • 100g of pan fried chorizo slices (optional extra for non veggies)

Instructions

  1. Prepare your asparagus by snapping off the woody ends and cook it in salted, boiling water for 2-3 minutes. Make sure it stays slightly al-dente. Cut into pieces, saving tips for final garnish.
  2. Melt butter with oil in a pan and add chopped onion together with sliced sun-dried tomatoes. Cook until softened but not coloured, approx. 5 min.
  3. Add the rice and mix to coat in oil in butter.
  4. Slowly start adding your stock (ladle at a time) for approx 16-20 minutes or until all the liquid is absorbed. You want the rice to have slight bite to it. Season to taste.
  5. Add chopped asparagus and stir for couple minutes longer, then remove from the heat.
  6. Add additional 15g of butter, freshly grated parmesan and stir until they melt.
  7. Garnish with saved asparagus spears and lemon zest and perhaps some pan fried chorizo if you are a carnivore.
  8. Enjoy.
